With 3 overripe bananas in our kitchen, some mouth watering banana bread muffins with a lemon glaze are the only answer. This is my first time using this wonderful, tasty and convenient recipe from Yammie’s Noshery. When I mention convenient, it’s because you can use a large ziploc bag for all mixing and eventually, easy piping to create each muffin.
Items Required:
- 12-Muffin Tin
- 1 Large Ziploc Bag
- Measuring Cups + Spoons: 1 cup, 1/2 cup, 1/2 tablespoon, 1/2 teaspoon, 1/4 teaspoon
- Optional for Glaze – Small Mixing Bowl + Regular Spoon
Ingredients:
- 3 brown bananas (1 cup mashed)
- 2 eggs
- 1 cup organic sugar
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 cup vegetable oil
- 1 teaspoon vanilla
Optional Glaze (*I would recommend adding it):
- 1/2 cup powdered sugar
- 1 tablespoon lemon juice (milk is also an option)
Instructions:
- Preheat oven to 375ºF.
- In a large Ziploc bag, mash the bananas.
- Add the eggs, seal the bag, and shake and squish until combined.
- Add the sugar and mix well.
- Dump in the flour, salt, baking soda, baking powder, and cinnamon. Before zipping and mixing them all the way in, mix them together a little with a spoon.
- Now add the oil (or melted butter as a replacement) and vanilla and shake and squish until well combined.
- Snip the corner of the bag and squirt the batter into a lined muffin tin (I didn’t use liners since I unfortunately didn’t have any and it worked just fine if you grease the muffin tin). Don’t make the hole very big because the batter is very runny. Pinch the corner between each muffin.
- Bake for about 20 minutes or until a toothpick comes out clean.
- To make the glaze, just mix together the powdered sugar and lemon juice (or milk) and spread over cooled muffins.
